Easy Bake and Broil Salmon
The secret to a dinner party that lingers on the palate for days; the pairing of a Pinot with just the right foods. Make something easy, but refined- so you can enjoy your guests more and not be a slave to the stove.
Easy Bake and Broil Salmon: A beautiful Salmon, (our favorite is King, Coho or any fresh) will make a deliciously simple yet elegant main course, that will bring out all the subtle flavors of a fine Pinot Noir!

(Serves 2)
2 salmon fillets, about 1.5" thick*
1 t. butter
1 lemon
Dill sauce (optional):
Combine in small bowl:
¼ c. sour cream
¼ c. mayonnaise
2 T. dill weed
Dash black pepper
1 t. lemon juice
Pre-heat oven to 400 degrees.
Rinse salmon and pat dry. Place on foil-lined broiling pan. BAKE at 400 degrees for 10 minutes*, until salmon is not quite done. Remove from oven, change oven setting to "broil". Spread butter on salmon, return to oven, and BROIL 3" from heat for 5 minutes, or until salmon is lightly browned on top.
Serve with lemon wedges and dill sauce (optional).
Goes extremely well with great Pinots!
